Vegan Potato Salad- Potatoes, Stone Ground Mustard, Plain Soy Yogurt, Celery, Red Onion, and Bell Pepper :)
Breakfast- Peanut Butter Banana Smoothie. A Bamboozal (Bamboozle?) in a glass!
Dessert- Coconut Bliss Chocolate Peanut Butter Frozen Dessert. This stuff is fantastic, but as addictive as ice cream… which is bad. Very bad.
Dinner- Parmesan Quinoa Patties and a side of sauteed Asparagus. Holy moley, these were insanely delicious. Just sayin’.
Dinner- Baked Potato with a side of sauteed Garlic, Dill Carrots.
Dinner - Mung Bean Noodle Veggie Stirfry with Garlic Orange Sauce.
Oat flour gnocchi with simple tomato, garlic, onion sauce. Mmm.
Breakfast- Whole Wheat and Oat Flour Crepes with Berries and Plain Yogurt. Jessi’s favorite.
Dinner- Burrito in a bowl! Black Beans, Avocado, Tomato, Red Onion, and Bell Peppers. Coulda added cilantro and corn chips to make it even better.
Dinner- Vegan Black Bean Chili (very very delicious)
Dinner - Asian Rice Noodle Stirfry with garlic, red onion, carrot, red pepper, broccoli, and cabbage!
Dinner- Almond, Edamame, Basil Pesto tossed with Brown Rice Noodles.
Breakfast- Pancakes made with potato and oat flours, plain yogurt and berries. Surprisingly scrumptious pancakes.
Dinner- Spiced up Black Bean Patties topped with Lacy Swiss and fresh Guacamole, and a side of 21 seasononings, Egg-washed Fries.
Dinner - Cabbage, carrot, onion, almond stirfry with roasted garlic mashed potatoes. Another winner.
